According to Yap, it pays to start from the bottom and work your way up to become the executive chef. This way, culinary graduates get to develop their culinary skills and build their portfolio.

“Fresh graduates can expect to start in the kitchen with tasks like peeling and chopping. Eventually, they will be assigned to the pantry, garde manger, which is the section of the kitchen with minimal cooking tasks like assembling simple, short order, or cold dishes,” explained Yap. “Once they are proficient, they can then move on to the hot line, where most of the cooked dishes from appetizers to main dishes are produced. After spending some time as a line cook, they may be promoted to chef de partie (senior chef), or the head of a particular station.”

Kitchens are typically divided or organized into several stations such as grill, entremetier (entrée preparer), and poissonnier (fish cook). Once a chef de partie has gained significant experience in various, if not all stations in the kitchen, he or she may be promoted to sous chef. The sous chef is second in command to the executive chef, who is the chef in charge of the kitchen.

Can’t stand the heat in the kitchen? You can still use your culinary skills in careers outside of the main kitchen. Other aspiring culinarians may find themselves in research and development or in cooking demonstrations for food and equipment manufacturers. There are also various non-traditional, but viable options for those interested in entering the culinary industry—consultancy, catering, food styling, and packaged food catering. Culinary graduates may also consider careers in food journalism, dietary, and nutrition-related professions, and consultancy to food purveyors.
